Ingredients for 2 servings:

  • 250 g scampi, ready to cook
  • 350g fusilli
  • 400 g tomatoes, chopped
  • 200 ml Cremefine
  • 1 onion(s)
  • 2 cloves garlic
  • 1 small pepper
  • 125 ml vegetable stock
  • salt and pepper
  • chili powder
  • Rapeseed oil
  • Parsley

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Bring a pot of salted water to a boil and cook the pasta al dente according to the package instructions. Chop the onions, peppers, and garlic. Add the oil to a hot pan and sauté the onions until translucent. Add the garlic and peppers. Add the scampi and fry. Deglaze with the tomatoes and vegetable stock. Add the pasta and simmer gently. Add the crème fraîche, but do not allow to simmer. Season with salt, pepper, and chili powder, if desired. Add parsley if desired.
