Scheveningen cheese – eggs

Ingredients for 4 servings:

  • 100 g smoked bacon, sliced
  • 4 eggs
  • 150 g cheese, Edam in slices
  • 30 g cheese (Gouda), grated
  • 100 g sour cream
  • 1 tsp mustard
  • Salt
  • Cayenne pepper
  • nutmeg

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Line an ovenproof dish with the ham slices. Fry for 10 minutes until crispy and brown. Layer Edam cheese on top of the bacon. If you like, you can also top with corn and diced red bell pepper. Crack the eggs open and carefully drop them onto the cheese, leaving the yolks intact. For the sauce: Mix the sour cream and mustard in a bowl, season to taste with salt, cayenne pepper, and nutmeg. Pour the sauce over the eggs and sprinkle everything with grated Gouda cheese. Bake the cheese eggs in the oven at 200°C on the bottom rack for about 25 minutes. Divide the cooked eggs into 4 portions. Serve with lettuce, tomato salad, and white bread, or even potatoes. We only ever serve them with a salad, as the eggs are incredibly filling.
