Schmarrn with caramelized apples

Ingredients for 6 servings:

  • 4 eggs
  • 300 g cream cheese, natural
  • 4 tbsp flour
  • 4 tbsp sugar
  • 1 pinch of salt
  • 2 tsp butter
  • 500 g apples
  • 250 ml apple juice
  • 1 tsp cornstarch
  • 2 tbsp powdered sugar

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Preheat oven to 160°C fan/convection oven. Separate the eggs. Mix the cream cheese with the flour, salt, and egg yolks. Beat the egg whites until stiff, gradually adding the sugar. Carefully fold in the egg whites. Heat the butter in an ovenproof frying pan and pour the mixture in a layer about 4 cm high. Place the pan in the oven and bake for about 20 minutes, until the surface is browned. Meanwhile, peel, core, and chop the apples. Mix the cornstarch with 1 tablespoon of water. Heat the apple juice in a saucepan and thicken it with the cornstarch. Add the apple pieces and simmer on low heat for about 3 minutes. Remove the Schmarren from the oven, carefully tear it into pieces, and serve with the apple pieces. Sprinkle with icing sugar and serve.
