Schnitzel from curly hen

Ingredients for 4 servings:

  • 1 curly hen or fat hen (wild mushroom)
  • 3 tbsp cornstarch
  • some water
  • some salt
  • 3 tbsp, heaped flour
  • 3 tbsp, heaped breadcrumbs
  • lots of butter

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Treat for autumn

First, slice the mushrooms as best you can, about 3 cm thick, and wash them. This often works best if you place the slices one by one in a colander and hold the tap over them. This way, less waste is achieved. Then, in a soup bowl, mix the starch with the water and a pinch of salt. In another soup bowl, mix the flour and breadcrumbs. Now, coat the slices one by one, first in the starch mixture and then in the flour and breadcrumb coating. Then, fry the slices in a pan with plenty of butter until crispy. Serve with a green salad or potato salad.
