Schnitzel made from grain

Ingredients for 4 servings:

  • 70 g millet
  • 70 g buckwheat
  • 70 g brown rice
  • 1 liter of water
  • 1 carrot(s)
  • 2 shallots
  • 3 eggs
  • 2 tbsp herbs, fresh
  • 70 g oat flakes, only if the consistency is too loose.
  • Salt
  • Paprika powder
  • pepper
  • 2 tbsp soy sauce (tamari)
  • Fat, for frying

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Cook each grain separately in 1/3 liter of water and let it swell. Grate the carrot and finely chop the shallots. Blend all ingredients until stiff. Season the dough and add the tamari to taste. Shape into “schnitzels” and fry in the fat until golden brown.
