Apple-walnut bread

Ingredients for 1 servings:

  • 300 g wheat flour
  • 200 g spelt flour (wholemeal)
  • 1 pack of yeast
  • 1 pack of sourdough, Seitenbacher ready-made
  • n. B. water, lukewarm
  • 1 tbsp salt
  • 2 tsp bread spice mix
  • 1 large apple, sour
  • 100 g walnuts, halved

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Mix the flour, yeast, salt, and bread spice and knead in the sourdough thoroughly. Then gradually add lukewarm water until you have a smooth, pliable yeast dough. Knead the dough vigorously for 10 to 15 minutes to make the bread fluffier. Cover and let it rise in a warm place for 1 to 2 hours. Meanwhile, peel and core the apple, and cut it into small cubes. If you like, you can chop the walnut halves further; I leave them whole. After the resting time, knead in the apple cubes and walnut halves by hand, form an oblong loaf, and make a light cut in the top. Rub in generously with water to make the crumb crispier. Preheat the oven to 250°C and bake the bread for about 5 minutes. Then reduce the temperature to 180°C and bake for another 45 to 50 minutes. The bread is ready when it sounds hollow when you tap the bottom.
