Ingredients for 4 servings:

  • 1 onion(s), finely chopped
  • 350 g fresh mushrooms, finely sliced
  • 40 g butter
  • 1 tbsp white wine
  • 4 thin turkey cutlets
  • 160 g cheese (Gouda)
  • 2 tomatoes
  • 2 tbsp crème fraîche
  • salt and pepper
  • Butter for the mold

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel and finely chop the onion. First, sauté the onion in half of the butter until softened. Add the mushrooms and fry until all the liquid has evaporated. Briefly simmer the crème fraîche and white wine. Flatten the turkey cutlets. Season all over with pepper. Brown in the remaining butter for 2 minutes on each side. Season the cutlets with salt and pepper and place them side by side in a buttered baking dish. Season the mushroom mixture with salt and pepper and spoon over the cutlets. Sprinkle with freshly grated cheese. Place tomato slices on top, season with salt and pepper. Bake in the oven at 180°C for 10 minutes until the cheese has melted. The cutlets are best served with white or green tagliatelle.
