Ingredients for 1 servings:
- 4 eggs
- 200 g butter, soft
- 150 g sugar
- 1 packet of vanilla sugar
- 1 tsp lemon(s) – zest, untreated, grated
- 300 g flour
- ½ pack of baking powder
- ½ cup milk
- 150 g chocolate sprinkles (chocolate drops), or finely chopped chocolate
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
enough for at least 12 pieces
Separate the eggs. Beat the egg whites until stiff peaks form. In a separate bowl, cream the butter and sugar until very light and fluffy. Gradually add the egg yolks and mix well. Add the vanilla sugar and lemon zest. Mix the flour and baking powder and sift them over the egg mixture. Gradually add the milk (the batter should drip off the spoon, not be too mushy). Add the chocolate chips (or chopped chocolate) to the batter and finally, carefully fold in the beaten egg whites. Line the muffin tins with paper baking cups. Then pour in the batter (if the batter is very tough and sticks to the spoon, rinse it with cold water occasionally). Bake the muffins in a preheated oven at 200°C for about 10 minutes. Then reduce the temperature to 180°C and continue baking until the muffins are golden brown. Note: This recipe was originally designed for 12 muffins, but I always get at least 20.
