Schäufele – Always Happy …

The perfect schäufele – always happy … recipe with a picture and simple step-by-step instructions.

  • 1 whole Schäufele
  • Boiling water
  • 1 Quartered onion
  • 2 Bay leaves
  • 1 teaspoon Salt
  • 1 teaspoon Peppercorns white
  • 1,5 teaspoon Caraway seeds
  • 1,5 teaspoon Yellow mustard seeds
  • 7 Juniper berries squeezed
  • 4 Allspice grains
  1. Put the peppercorns, caraway seeds, mustard seeds, juniper berries and allspice seeds in a tea strainer or tie them in a cotton cloth (textile handkerchief).
  2. Put the shovel in plenty of boiling water (the meat should be covered with water), add the onion, bay leaves, salt and the spice tea strainer or herb bag and let the meat cook gently with the lid on for about 2 hours.
  3. I served my Schäufele with potato salad with leek vegetables – another time with small potatoes and broad beans … so many things are possible, but this is about the Schäufele!
  4. 4th note: the meat is of course way too much for 2 people, but I like to freeze the cooked Schäufele in some cooking stock, then I always have a very quick “Schäufele” in stock. In addition, you can usually only buy the meat “whole”.
