Ingredients for 1 servings:

  • 200 g Kombucha (kombucha mushroom), young
  • 250 g sugar
  • 1 tbsp lemon juice

Wash the kombucha mushroom and remove any streaks. Dry with a cloth and cut into small squares using a large, sharp knife. Heat the sugar in a sufficiently large saucepan, melt, and allow to turn golden brown. Add the kombucha pieces and lemon juice, being careful as it will splash. Mix well and cook for 15 minutes over medium heat, stirring constantly. Place the kombucha caramel candies on a baking sheet lined with parchment paper, spread them apart slightly, and let them cool. The candies are soft yet sticky-sweet. They have a hint of kombucha and the flavor of caramelization. Tip: If you have a thick kombucha that you know should break into two pieces for later use, continue with the recipe and cut the mushroom in half. Many of the thin kombucha layers will stick together once you cook it in sugar.
