Ingredients for 4 servings:

  • 340 g flour (self-raising flour or flour, type 405 with a sachet of baking powder)
  • 600 ml milk
  • 15 g butter, melted
  • 1 m.-sized egg(s), very fresh and at room temperature
  • ½ tsp salt
  • some butter for frying

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Scotch pancakes

Sift the flour and mix with the salt. Whisk the egg with the melted butter. While stirring constantly, add the egg and butter mixture to the flour, followed by the milk, and mix everything into a smooth batter. Grease and heat a frying pan and drop the batter into the pan by the spoonful. Cook the pancakes over medium heat for 3-4 minutes per side until golden brown. Keep warm in the oven and serve with butter and jam or honey.
