Ingredients for 2 servings:
- 500 g asparagus, green
- 1 medium shallot(s) or 1 red onion
- 2 cloves garlic, fresh
- 2 spring onions
- 3 tbsp garlic oil
- 2 tbsp chives, fresh
- 4 m.-sized eggs
- 6 small meatballs (party meatballs)
- n. B. Salt and pepper from the mill
- n. B. Garlic granules from the mill
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Clean the asparagus and trim the bottom ends. Cut the asparagus into approximately 3 cm long pieces (cut diagonally for faster cooking). Cut the mini meatballs into approximately 3 mm wide slices. Clean the spring onions and cut them into approximately 3 cm long pieces (also diagonally). Peel the garlic and dice them (do not press them!). Peel and slice the shallots (you can also use a red onion if you like). Heat the garlic oil, preferably in a wok or a deep frying pan, over high heat. Add the asparagus and sauté lightly in the garlic oil. Then add the spring onions and shallots. Sauté everything, stirring constantly, until the shallots are translucent. Then add the sliced mini meatballs and fry briefly. Once everything is well sautéed, crack the eggs over the top and mix with everything else like scrambled eggs. When the egg is set, season with salt, pepper, and garlic. Arrange and serve in portions.
