Ingredients for 2 servings:
- 4 eggs
- salt and pepper
- 1 tsp basil, finely chopped, fresh or dried
- 1 tbsp Parmesan, finely grated
- 200 g asparagus, green, cut into pieces
- some butter
- Pinch(s) of sugar
- 100 g cooked ham
- some vegetable oil
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes
Whisk the eggs with basil, salt, and pepper. Peel the asparagus, cut it into pieces, and cook it in water with a little salt, sugar, and butter until slightly tender. Heat a little oil in a pan and add the eggs. Let it cook briefly, then arrange the asparagus pieces and the sliced ham on top and sprinkle with Parmesan cheese. Cover, turn off the heat, and let it rest briefly. Then remove from the pan and serve with salad.
