Ham, asparagus and parmesan omelet

Ingredients for 2 servings:

  • 4 eggs
  • salt and pepper
  • 1 tsp basil, finely chopped, fresh or dried
  • 1 tbsp Parmesan, finely grated
  • 200 g asparagus, green, cut into pieces
  • some butter
  • Pinch(s) of sugar
  • 100 g cooked ham
  • some vegetable oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Whisk the eggs with basil, salt, and pepper. Peel the asparagus, cut it into pieces, and cook it in water with a little salt, sugar, and butter until slightly tender. Heat a little oil in a pan and add the eggs. Let it cook briefly, then arrange the asparagus pieces and the sliced ​​ham on top and sprinkle with Parmesan cheese. Cover, turn off the heat, and let it rest briefly. Then remove from the pan and serve with salad.
