Scrambled tofu

Ingredients for 4 servings:

  • 3 tbsp oil
  • 1 large onion(s)
  • 400 g smoked tofu
  • 400 g tofu, natural
  • 400 g silken tofu
  • 1 tbsp turmeric
  • salt and pepper
  • ½ bunch chives, cut into rolls

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Peel the onion and dice. Dice the smoked tofu. Place the silken tofu in a bowl and stir in the salt and turmeric. Heat the oil in a large pan. Fry the onions and smoked tofu together until lightly browned. Crumble in the natural tofu from your hand, taking care not to create too large pieces. If necessary, break them up with a spatula in the pan. Lightly brown the natural tofu while tossing. Finally, add the silken tofu with the spices, let it marinate a little longer and firm up. Season the dish with pepper and salt and garnish with the chives. With tofu, the temperature is crucial: if it’s too low, it won’t brown at all. If it’s too high, it will burn quickly. And nothing is worse than burnt tofu. On my induction hob with 9 as the highest setting, 6.5 – 7 is the best setting for frying tofu.
