Oven-baked zucchini with peppers and apple

Ingredients for 4 servings:

  • 2 large zucchini
  • 2 bell peppers
  • 1 large apple
  • 1 large onion(s)
  • 1 garlic clove(s)
  • rosemary
  • salt and pepper
  • some oil or fat for the mold

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Wash the zucchini, halve and deseed, then quarter and cut into bite-sized pieces. Place the zucchini pieces in an oiled or greased baking dish. Do the same with the bell pepper and apple. Add a little olive oil, the onion cut into half rings, the crushed garlic, and rosemary, and mix thoroughly. Place the vegetables in a preheated oven at approximately 200°C (convection oven) for about 20 to 25 minutes. About 10 minutes before the end, mix everything again and season with salt and pepper. Serve with a baguette, for example. Tip: If you like, you can also add fried meatballs beforehand. This makes the dish neither vegetarian nor vegan.
