Ingredients for 1 servings:

  • 1 pineapple
  • 3 bananas
  • 1 lemon(s), untreated
  • 25 g fresh ginger
  • 3 tbsp Curaçao
  • 500 g gelling sugar, 2:1

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Pineapple – Banana – Jam

Peel and dice the pineapple. Weigh out approximately 600g. Add approximately 370g of peeled banana. Zest the lemon, squeeze the juice, and add both. Stir in the finely chopped ginger and gelling sugar. Let the mixture rest for approximately 1 hour. Then blend thoroughly with a hand blender. Bring the mixture to a boil and simmer for 4 minutes, stirring continuously. Finally, stir in the curacao. I used a curacao syrup. Pour into the prepared jars and seal immediately.
