Sour cherry marzipan jam with dark chocolate

Ingredients for 1 servings:

  • 1,000 g sour cherries, pitted, weighed, fresh or frozen
  • 80 g marzipan (raw mass)
  • 500 g gelling sugar, 2:1
  • 40 g chocolate, at least 70% cocoa content

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Puree the cherries and mix with the gelling sugar. Chop the marzipan and add it. Bring the mixture to a boil while stirring and cook according to the package instructions (about 3-5 minutes). Chop the chocolate and stir in well. Test for settling by placing a few drops of the jam on a small plate. If the jam doesn’t run, the consistency is fine. Fill twist-off jars to the brim with the jam, seal tightly, and turn upside down.
