Seasonal cake with cherries

Ingredients for 1 servings:

  • 2 large eggs
  • 200 g sugar
  • 125 g butter, melted
  • 150 ml milk, room temperature
  • 225 g flour
  • 2 tsp baking powder
  • 750 g cherry(s), pitted
  • 100 g almond flakes
  • Butter, for the mold
  • Powdered sugar, for sprinkling

quick dough for seasonal fruits

Preheat the oven to 175°C. Beat the sugar and eggs in a bowl until fluffy, then add the melted butter and milk. Mix the flour with the baking powder and briefly stir into the mixture to form a creamy batter. Pour the batter into a buttered 28-30cm springform pan. Spread the cherries (or other seasonal fruit) on the batter and sprinkle with almond flakes. Place the cake on the middle rack of the oven and bake for 30-35 minutes using conventional heating. Then sprinkle with powdered sugar and serve lukewarm with cream. Depending on the season, you can also use apples, pears, plums or mirabelle plums. You can also use preserved fruit. The cake tastes good cold too, of course.
