Ingredients for 4 servings:

  • 2 pieces of pork (Secreto), approx. 400 g each
  • 1 tbsp clarified butter
  • salt and pepper
  • Herb butter, optional

Instructions

Working time approx. 5 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 18 minutes

Trim the meat, removing any excess fat. But don’t cut all of it, and trim any thin parts. Fry in a hot pan with clarified butter for about 3 to 4 minutes per side, depending on the thickness of the meat. Season with salt and pepper. Then let it rest for about 5 minutes in a preheated oven at about 80°C. If you like, add a knob of herb butter to the meat when serving. Fried potatoes, baked potatoes, or French fries make excellent side dishes.
