Here, too, take the steak out of the refrigerator about an hour in advance and let it slowly come to room temperature. Trim the secreto if necessary and add a little salt. Then sear the meat in clarified butter for 2-3 minutes on each side to give it a nice crust, while still being slightly pink on the inside. The core temperature should be around 56-57°C. Slice the secreto across the grain into slices, sprinkle with freshly ground pepper, and add salt to taste.
