Ingredients for 3 servings:

  • 100 g durum wheat semolina
  • 500 ml milk
  • 1 packet of vanilla sugar
  • 4 m.-sized eggs
  • 1 pinch of salt
  • 100 g butter
  • 100 g sugar
  • 1 dashes lemon juice
  • Cinnamon
  • Butter for the mold

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour 5 minutes; Total time approx. 1 hour 20 minutes

Boil the milk, vanilla sugar, and semolina together for about 5 minutes, stirring constantly. Separate the eggs and beat until stiff peaks form, adding a pinch of salt. Cream the butter until fluffy, then gradually add the sugar and egg yolks, along with lemon juice to taste. Finally, carefully fold in the egg whites and mix everything with the semolina. Pour the mixture into a shallow, buttered baking dish and bake in the oven at 200°C (top/bottom heat) for 1 hour. Sprinkle with cinnamon 5 minutes before the end of the baking time, if desired, and reduce the temperature if necessary to prevent it from burning. Compote goes well with this.
