Semolina casserole with cherries

Ingredients for 4 servings:

  • ½ liter of milk
  • 1 pinch of salt
  • 1 packet of vanilla sugar
  • 100 g durum wheat semolina
  • 75 g sugar
  • 4 eggs
  • 500 g cherry(s), pitted, from the jar
  • 1 tbsp cornstarch

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Bring the milk to a boil in a saucepan with salt and vanilla sugar. Then whisk in the semolina. Simmer the mixture over low heat for 5 minutes, stirring occasionally. Grease a round casserole dish with 1 teaspoon of butter. Put the remaining butter in a mixing bowl and stir in the sugar with a mixer until dissolved. Separate the eggs and stir the egg yolks into the butter mixture. Beat the egg whites until stiff peaks form. Preheat the oven to 175 degrees Celsius (350 degrees Fahrenheit). Now add the warm mixture to the butter and egg mixture and fold in the stiff peaks. Pour everything into the casserole dish and bake for approx. 20-25 minutes. Bring the cherries to a boil in a saucepan, thicken with cornstarch, and serve with the finished semolina casserole. 375 kcal per serving.
