Ingredients for 1 servings:
- 100 g semolina (hard)
- 100 ml milk
- 100 g sugar
- 80 g butter
- 1 packet of vanilla sugar
- 1 pinch of salt
- 100 g spelt flour
- 1 tsp, leveled baking powder
- some lemon peel

makes about 40 pieces
Pour the cold milk over the semolina and let it sit for 45 minutes. Whisk together the softened butter, sugar, lemon juice, and salt. Stir in the flour and baking powder, then stir in the semolina. Drop small heaping teaspoonfuls onto the baking sheet, leaving space between each one, as the cookies will spread slightly. Bake at 160°C (320°F) for 10-12 minutes, depending on the size of the cookies. Do not remove the cookies from the baking sheet immediately; just loosen them from the bottom of the sheet. Dip the cooled cookies into the chocolate glaze.
