Ingredients for 2 servings:

  • 40 g butter
  • 1 egg(s), large
  • Salt
  • some nutmeg
  • 80 g semolina
  • 250 ml meat broth
  • ½ bunch parsley, chopped

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cream the butter until fluffy. Mix in the egg, salt, and nutmeg. Gradually stir in enough semolina to form a dough that’s easy to work with. Let it rest in a cool place for 1 hour. Meanwhile, bring 2 liters of water to a boil and add salt. Using a tablespoon, scoop out dumplings from the dough and place them in the gently simmering water. Let them stand for 20-25 minutes, or until tender. Don’t add too many dumplings at once (they will double in size). Place the drained dumplings in hot meat broth and serve sprinkled with chopped parsley.
