Semolina dumplings in broth

Ingredients for 2 servings:

  • 250 ml milk
  • 1 tbsp butter
  • 1 tsp salt
  • 100 g semolina (durum wheat semolina)
  • 2 eggs
  • ½ liter broth

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Soup garnish

Bring the milk to a boil with butter and salt, sprinkle in the semolina, and stir until the mixture starts to pull away from the bottom of the pan. Remove the pan from the heat, stir one egg into the hot porridge and let it cool, then stir in the second egg. Bring the broth to a boil. Using two wet teaspoons, scoop out small dumplings from the porridge and let them simmer in the gently simmering broth for about 10 minutes. If you want a particularly clear broth, you can also cook the dumplings separately in salted water and only add them to the broth when ready to serve.
