Semolina porridge

Ingredients for 4 servings:

  • 500 ml sour milk, alternatively natural yogurt
  • 3 eggs
  • 400 g durum wheat semolina
  • Salt
  • Clarified butter or neutral vegetable oil
  • 1 can peach(s), 800 g

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Whisk together sour milk, eggs, semolina, and salt to form a thick batter. Heat a pan with clarified butter or oil, then add the batter and crush it into crumbs. The stew should not brown, but retain its golden yellow color. Then reduce the heat to low so the stew can simmer for about 10 minutes, stirring occasionally. We serve it with canned peaches.
