Semolina pudding with honey

Ingredients for 4 servings:

  • 750 ml low-fat milk
  • 12 tsp honey
  • 160 g semolina, soft wheat
  • 4 tbsp Cremefine, for whipping
  • 500g papaya
  • 120 ml orange juice
  • 10 tbsp lime juice
  • 3 tbsp brown sugar
  • 410 g peach(s), can, without sugar
  • 140 ml orange juice
  • 3 tbsp sugar
  • 500 g strawberries
  • 2 tbsp brown sugar
  • 2 tsp mint, chopped

Working time approx. 25 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 25 minutes

with three different fruit sauces to choose from

Bring the milk to a boil over low heat and remove from the heat. Stir in the semolina and let it swell for about 5 to 10 minutes. Whisk the Cremefine and fold in. Divide the semolina between small glasses or pudding molds and chill for about 1 hour. Turn the pudding out and serve with one of the three sauces. Papaya sauce: Dice the papaya. Heat the orange and lime juice in a saucepan. Stir in the papaya cubes and sugar and puree after about 3 minutes. Let the sauce cool. Peach and orange sauce: Dice the peaches. Heat the orange juice in a saucepan. Add the peach cubes and sugar, cook for 3 minutes and then puree. Let cool before serving. Strawberry and mint sauce: Puree the strawberries with the sugar (do not boil). Stir in the mint.
