Ingredients for 4 servings:

  • 200 g berries (blueberries, raspberries, blackberries, each single variety)
  • 500 g low-fat quark (cottage cheese)
  • 150 ml low-fat milk
  • 50 g sugar, alternatively sweetener
  • 2 tbsp lime juice
  • 2 egg whites

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Rinse the berries in a sieve and drain. Set some aside for decoration. Combine the quark with the milk, sugar, and lime juice in a bowl and whisk until smooth. Purée the remaining berries with a hand blender and add to the quark mixture. Mix well. Beat the egg whites with a mixer until stiff and then gently fold into the quark mixture with a whisk. Refrigerate for 30 minutes to set. Pour into decorative bowls (or ice cream bowls) and garnish with the berries.
