Ingredients for 2 servings:
- 250 g onion(s)
- 400 g pork (shoulder or belly)
- 250 g tomatoes
- 3 bell pepper(s), red
- 1 cup rice
- 3 potatoes
- Salt
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 2 hours; Total time approx. 2 hours 20 minutes
In a tightly sealed pot, first add the sliced onions and diced pork. Then add a layer of tomato slices, then the rice, then the peppers (gutted and sliced). Finally, add the sliced potatoes. Pour enough water over everything to just cover the contents and simmer without stirring for about 2 hours at 120-140 degrees Celsius until soft.
