Ingredients for 4 servings:
- 500 g pork
- 2 onions, peeled
- 1 clove(s) garlic
- 4 tbsp oil
- 2 tbsp tomato paste
- 750 ml meat broth
- 2 tsp thyme, shredded
- 1 tbsp paprika powder
- some salt
- some pepper
- 200 g rice (long grain rice)
- 2 bell peppers
- 1 chili pepper(s)
- 3 tomatoes
- 1 tbsp parsley, chopped
Instructions
Working time approx. 1 hour; Total time approx. 1 hour
Cut the meat into pieces, wash, and pat dry. Dice the onions and finely chop the garlic clove. Heat the oil to a high heat and brown the meat. Reduce the heat to medium and sauté the diced onions and garlic over medium heat. Add the tomato paste and stock. Season with thyme, paprika, pepper, and salt and cook for about 30 minutes. Wash and drain the rice. Trim, wash, and finely dice the bell peppers and chilies. Blanch the tomatoes, peel, quarter, and deseed them. Mix these ingredients with the meat. Cook for about 30 minutes, until the rice has absorbed the liquid. Season with salt and pepper and serve with chopped parsley.
