Pork with a Greek touch

Ingredients for 4 servings:

  • 1 pork fillet(s) (pork loin roast)
  • some vegetable broth, instant
  • pepper
  • 1 cup Basmati, large cup
  • 1 cucumber(s)
  • 1 cup of Greek yogurt
  • 1 cup of natural yogurt
  • 2 cloves garlic
  • Salt
  • olive oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

With tzatziki and rice

Trim the pork of any fat and cut into medallions, season with stock powder and pepper. Add a little olive oil to a hot pan and fry the meat until tender. Cook the rice according to the package instructions. For the tzatziki, grate the cucumber, sprinkle with salt, and let it absorb briefly. Then squeeze the water out of the cucumber. Mix the cucumber with both yogurts, the crushed garlic, and 2 tablespoons of extra virgin olive oil, and season with salt. Serve everything together on a plate.
