Ingredients for 1 servings:

  • 750 g apples
  • 200 g sugar
  • 200 g raisins
  • 2 tbsp rum or liquor
  • 200 g nuts, whole
  • 1 tbsp cocoa powder
  • ½ pack of baking powder
  • 1 pack of gingerbread spice
  • 400 g flour
  • Fat for the mold

Instructions

Working time approx. 45 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 45 minutes

Coarsely grate the apples. Lightly toast the whole nuts in a pan. Mix the apples, nuts, sugar, raisins, and rum or schnapps well and let stand overnight. The next day, add the cocoa powder, baking powder, flour, and gingerbread spice. Mix everything with your hands (if the dough is a bit too dry, I add a little apple juice. This makes the apple bread nice and moist). Pour into a greased loaf pan and bake in a preheated oven at 170°C – 180°C for about 1 hour. Note: Unfortunately, a skewer test is not possible because the apple bread is very moist. Be careful not to bake for too long, or the apple bread will quickly become too dry.
