Ingredients for 4 servings:
- 800 g potatoes
- Salt and pepper spices as desired
- curry powder
- basil
- oregano
- garlic powder
- Cayenne pepper
- Spice(s), others, as desired
- Olive oil, for the baking tray

Ideal for using up leftovers
Brush the potatoes thoroughly so the skins are edible. Cut them lengthwise into wedges. Preheat oven to 200°C. Mix your choice of seasonings. Put about half in a large bag, add half of the potatoes, and shake well to coat the potato pieces. Repeat with the remaining seasoning and the remaining potatoes. Place them on a baking sheet brushed with olive oil and bake until the potatoes are tender and crispy brown (about 30 minutes at 220°C). Serve with salsa or tzatziki (depending on the seasonings used).
