Shaking cucumbers

Ingredients for 4 servings:

  • 4 large cucumber(s), green
  • 1 large onion(s)
  • 1 bunch of dill
  • 3 slices of ginger
  • 1 tbsp, heaped mustard seeds
  • 2 cloves
  • 10 peppercorns
  • 5 allspice berries
  • 1 tsp, heaped coriander seeds
  • 1 tsp, heaped fennel seeds
  • 1 tbsp, leveled salt
  • 1 tbsp, heaped sugar
  • 3 tbsp vinegar
  • 2 small bay leaves

Instructions

Working time approx. 30 minutes; Rest period approx. 3 days; Total time approx. 3 days 30 minutes

quick, tasty cucumbers

Wash the cucumbers, peel them thinly, halve them, and remove the cores. Cut the cucumbers into fairly small pieces, roughly tear the dill, and mix all the ingredients together in a tightly sealed container. Place this container in the refrigerator and shake thoroughly whenever you have the chance. Season again the next day with vinegar, salt, and/or sugar. Shake the cucumbers well occasionally. The cucumbers will be ready after about 3 days, but they will improve as they age. The cucumbers will keep for about 8 days, depending on the amount of vinegar and salt. This recipe also works very well with zucchini. Cucumbers have a fresh, summery flavor and go well with everything.
