Ingredients for 2 servings:
- 3 m.-sized eggs
- 6 tbsp flour
- 1 shot of milk
- 1 tsp baking powder
- 1 tsp salt
- 2 small shallots
- 100 g diced ham
- 10 g butter for frying
Instructions
Working time approx. 10 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 50 minutes
Crack the eggs and beat until frothy. Add 3 tablespoons of flour and continue beating. Stir in a splash of milk and mix with the remaining 3 tablespoons of flour, the baking powder, and the salt to form a creamy batter. Let the batter rise in the refrigerator for 1/2 hour. In the meantime, peel the shallots and slice them into rings. Lightly brown the shallot rings in a small frying pan. Heat another frying pan with 5g of butter and add half of the batter. Sprinkle 50g of diced ham over the top and let it sink in a little. Add half of the shallot rings and cook the pancake until golden brown on both sides. Repeat this process with the remaining ingredients. Plate the pancakes and serve.
