Mozzarella in a thyme crispy coating

Ingredients for 2 servings:

  • 2 balls of mozzarella
  • 1 egg(s)
  • 2 tbsp thyme, dried
  • e.g. salt and pepper
  • e.g. breadcrumbs
  • Oil for frying

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 6 minutes; Total time approx. 11 minutes

Halve the mozzarella along the thin side to create two flat halves. Season the mozzarella with salt and pepper. Whisk the egg in a shallow dish. Mix the breadcrumbs with the dried thyme. Preheat a pan to high heat. Dip the mozzarella in the egg first, then coat it in the breadcrumbs. If desired, coat it a second time. Add it to the pan and reduce the heat to medium. Depending on the temperature, cook the cheese for 2-3 minutes on each side until golden brown. Tip: If you have leftover egg and breadcrumbs, you can combine them, season with salt and pepper, and then cook them as well. My mother always used to do it this way.
