Ingredients for 1 servings:

  • 4 eggs, size M, approx. 250 g
  • 300 g low-fat curd cheese
  • 100 g erythritol (sugar substitute)
  • 50 g almonds, ground
  • 50 g coconut flour, defatted
  • 50 g gluten
  • 25 g wheat bran, ground
  • 1 packet of baking powder
  • 1 pinch of cinnamon
  • 1 pinch(s) of stevia powder, or some stevia liquid sweetener
  • 800 g plum(s) or mirabelle plums, pitted, quartered

First, mix the eggs and low-fat quark together in a bowl with a mixer until you have a lump-free mixture. The wheat bran should be ground together with the grated almonds in a stand mixer beforehand. If necessary, you can omit the wheat bran. The remaining dry ingredients are stirred in and the batter is spread evenly on a baking tray lined with baking paper using a spatula. The batter is then topped with fruit. In this plum version, the plums are lightly pressed into the mixture with the skin facing down. For less sweet fruit, the amount of sweetener should be increased. The cake is baked in the oven at 180°C with fan for 30 minutes. Notes: The combination of erythritol and stevia results in a fuller sweetness with less aftertaste.
