Shirataki noodle and vegetable stir-fry

Ingredients for 2 servings:

  • 1 bag of shirataki noodles
  • 1 stalk(s) leek
  • 1 bell pepper(s), red
  • possibly zucchini
  • 3 tbsp soy sauce
  • 2 tbsp fish sauce
  • salt and pepper
  • 3 eggs
  • little milk
  • 1 onion(s)
  • possibly fried onions

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Dice the onion, slice the leek, and slice the bell pepper. Drain the noodles, rinse, and let them drain. Whisk the eggs with a little milk. Sauté the diced onion in a pan. Add the leek and bell pepper and cook. Add the noodles and the egg/milk mixture to the pan and stir-fry until cooked through. Now add the soy sauce, fish sauce, salt, and pepper, and season to taste. Serve with fried onions on top, if desired.
