Ingredients for 30 servings:
- 300 g butter, soft
- 200 g sugar
- ½ tsp salt
- 500 g flour, 405

Super butter cookies
Mix the butter with the sugar and salt. Knead in the sifted flour and let the dough rest, covered, in the refrigerator for 2 hours. Preheat the oven to 190°C. Roll out the dough on a floured surface to about 1 1/2 cm thick and place it on a baking sheet. Cover the edgeless side with aluminum foil. Prick the dough several times with a fork and bake on the middle rack for about 2-3 minutes. While the shortbread is still hot, cut it into 1 1/2 x 7 cm fingers and immediately coat them in sugar.
