Shrimp and bacon skewers with apple dip

Ingredients for 4 servings:

  • 1 sour apple (e.g. Granny Smith)
  • 1 tsp honey
  • 1 lime(s), the juice
  • 1 tbsp crème fraîche
  • 20 basil leaves
  • 12 king prawns (or more for smaller ones)
  • 6 slice(s) bacon (belly bacon)
  • some salt and pepper
  • some oil for frying

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Quarter the apple, remove the core, and finely grate (with the skin). Mix with honey, lime juice, and crème fraîche. Finely chop the basil leaves, stir in, and let the dip simmer. Meanwhile, halve the bacon slices lengthwise, wrap each shrimp with half a slice of bacon, and thread it onto wooden skewers. Season the skewers with salt and pepper and sear on both sides in hot olive oil. Drain briefly and serve with the dip.
