Shrimp and pineapple wrapped in bacon

Ingredients for 10 servings:

  • 10 shrimp(s), raw
  • 2 slices of fresh pineapple, approx. 0.5 cm thick
  • 5 slices of breakfast bacon
  • Oil for frying
  • 5 tsp chili sauce (Thai chili sauce), sweet and hot
  • possibly mint leaves, for garnishing

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 24 minutes

Fruity-spicy

Peel the shrimp, devein, rinse, and pat dry thoroughly. Peel the pineapple, remove the core, and cut the flesh to the size of the shrimp. Halve the bacon lengthwise. Place the shrimp on top of the pineapple pieces and wrap both pieces in bacon. Heat the oil in a pan and fry the shrimp and pineapple parcels until golden brown. Caution: Do not overcook, as this will prevent the shrimp from becoming dry and tough. Spoon half a teaspoon of chili sauce onto each finger food spoon, place the parcels on top, and garnish with mint leaves, if desired.
