Shrimp – champagne – cream soup

Ingredients for 4 servings:

  • 100 g frozen shrimp
  • 250 g potatoes
  • 200 g carrot(s)
  • 1 half onion(s) , or 1-2 shallots
  • 1 tbsp, leveled butter
  • 1 tsp, heaped vegetable broth, instant
  • 60 ml cream
  • 100 ml sparkling wine
  • 500 ml water
  • e.g. salt and pepper

Working time approx. 15 minutes; Total time approx. 15 minutes

Delicious cream soup with potatoes and shrimps

Peel and dice the potatoes and carrots, peel and finely chop the onion(s). Heat the butter in a saucepan and sauté the potatoes, carrots, and onions, then deglaze with the water. Bring to a boil, then add the instant broth. Cover and simmer for about 20 minutes. Once the vegetables are tender, puree everything with an immersion blender, add the cream, thawed, and rinsed shrimp, and bring back to a boil. Season with salt and pepper and finish with a splash of sparkling wine before serving.
