Provençal herb meatballs

Ingredients for 4 servings:

  • 750 g minced meat, mixed (pork and beef)
  • 1 egg(s)
  • 3 tbsp breadcrumbs
  • 2 tsp lemon zest
  • 50 g olives, green, roughly chopped
  • 1 tbsp capers
  • 1 bunch lemon thyme, chopped
  • 4 rosemary needles, chopped
  • 2 sage leaves, chopped
  • 1 thick garlic clove(s), chopped
  • salt and pepper
  • Olive oil for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Mix all ingredients well and form 8 meatballs. Fry them in good olive oil.
