Shrimp skewers with lemon chili marinade

Ingredients for 4 servings:

  • 16 king prawns
  • 2 cloves garlic, chopped or crushed
  • 1 piece(s) ginger (approx. 1 cm), fresh, grated
  • 2 tbsp coriander greens, finely chopped
  • 2 tbsp chili sauce
  • 1 tbsp soy sauce
  • 1 tbsp honey, liquid
  • 3 tbsp lemon juice
  • 1 tbsp oil

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

For the marinade, mix all ingredients – except the king prawns – thoroughly in a bowl. Add the prawns and toss in the marinade. Cover and refrigerate for about 1 hour. Thread 4 prawns onto each skewer. Preheat the grill and grill the prawns for about 3 minutes per side. Tip: You can also expand the recipe and alternate baby corn, spring onions, or red bell pepper pieces on the skewers.
