Shrimp Vermicelli

Ingredients for 4 servings:

  • 500 g noodles (vermicelli, vermicelli)
  • 2 peppers, red
  • 2 sprigs rosemary
  • 4 tbsp olive oil
  • 16 shrimp(s), ready to cook
  • 1 tbsp soy sauce
  • 3 tbsp lime juice
  • Salt and pepper, freshly ground

interesting variation with lime and soy sauce

Cook the vermicelli in salted water according to the package instructions until al dente. Halve the peppers, scrape out the seeds, and finely slice the peppers. Wash and pat the rosemary sprigs dry, then strip off the needles. Heat the olive oil in a large pan with the pepper strips and half of the rosemary needles. Add the shrimp and stir-fry for about 2 minutes. Deglaze everything with the soy sauce and lime juice and season with salt and pepper. Remove the shrimp from the pan and keep warm. Add the cooked and drained pasta to the pan while still hot and toss with the marinade. Transfer the pasta to warmed plates, garnish with the shrimp and the remaining rosemary needles, and serve.
