- 2 garlic cloves
- 80 g Parmesan, freshly grated
- 100 g arugula
- 250 g butter
- 3 tbsp lemon juice

Peel and finely chop the garlic. Remove the stalks from the arugula, wash it, spin it dry, and finely chop it. Finely grate the Parmesan cheese. Beat the room-temperature butter with lemon juice, salt, and pepper with a hand mixer for 4 minutes until creamy. Then stir in the garlic, Parmesan cheese, and arugula. Delicious with grilled food, with boiled potatoes, or simply on fresh bread. It freezes well, so you’ll always have arugula butter on hand.
