Ingredients for 6 servings:

  • 8 tbsp olive oil
  • 6 cloves garlic
  • 6 small onions, red
  • 300 ml red wine, dry, strong
  • 400 g minced meat, mixed
  • 1,000 g tomatoes, pureed
  • 4 tbsp thyme, dried
  • salt and pepper
  • Sugar

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 1 hour 20 minutes; Total time approx. 2 hours

Peel the garlic and halve the cloves. Add 8 tablespoons of olive oil to a saucepan. Sauté the garlic on low heat with the lid closed for 30 minutes, stirring occasionally. After 30 minutes, the cloves should be sticky; remove them. Finely chop the onions and fry them with the minced meat in the garlic oil over high heat. When the onions are translucent and the minced meat is crispy, add the red wine. Allow the red wine to completely evaporate. Then add the passata, thyme, and a pinch of sugar. Season with salt and pepper to taste. Simmer on low heat with the lid closed for one hour, stirring occasionally. The long cooking time is important for the flavor! Season again with salt, pepper, and thyme, if desired. Serve with spaghetti and Parmesan.
