Spinach – minced meat – pasta

Ingredients for 4 servings:

  • 400 g spinach, frozen
  • 200 g light cream cheese
  • ½ jar of tomatoes, pickled, dried
  • 3 cloves garlic
  • 1 onion(s)
  • 15 minced meat balls (real minced meat or vegetarian from a health food store)
  • 300 ml tomato(s), pureed
  • herbal salt
  • Cayenne pepper
  • 1 tbsp olive oil
  • 500 noodles, pasta (e.g. penne)
  • pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

also vegetarian with soy meatballs

Cook the pasta al dente. Finely chop the onions and sauté in the olive oil until translucent. Thaw the frozen spinach in the pot with the onions. While the spinach is thawing, add the passata and the (soy) meatballs. Season to taste with the crushed garlic, salt, pepper, and cayenne pepper. Dice the sun-dried tomatoes and add them. When everything is hot and cooked through, stir the cream cheese into the sauce. Mix with the pasta and serve.
