Ingredients for 4 servings:

  • 20 g raisins
  • 2 eggs
  • salt and pepper
  • 400 g minced beef
  • 30 g pine nuts
  • 3 sprigs flat-leaf parsley
  • breadcrumbs
  • oil
  • 2 spring onions
  • some capers
  • some lemon slices

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Soak the raisins in warm water for 10 minutes. Crack the eggs into a bowl and season with salt and pepper. Add the drained raisins, ground beef, pine nuts, and 2 sprigs of chopped parsley, and knead everything together. Add a little more breadcrumbs if desired. Form the dough into walnut-sized balls, about 20 of which will make a bowl. Coat in breadcrumbs and fry in a pan with plenty of oil. Remove from the pan and drain on kitchen paper. Cut the spring onions into rolls. Arrange the polpettini on a plate and garnish with spring onions, chopped parsley, capers, and lemon slices. Serve with fried potatoes and salad.
