Sicilian turkey leg

Ingredients for 6 servings:

  • 2 kg turkey meat (turkey thigh)
  • 1 kg onion(s), medium-sized
  • 700 g beefsteak tomatoes
  • 4 cloves garlic
  • ½ liter meat broth
  • Clarified butter
  • Salt
  • Cayenne pepper
  • pepper
  • 1 tbsp thyme

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Remove the skin from the turkey thigh and cut into medium-sized pieces. Season with salt and cayenne pepper and fry in a pan with clarified butter. Peel and quarter the onions. Skin the beef tomatoes and chop them finely. Place the seared meat in a large roasting pan. Sprinkle the finely chopped garlic on top. Now add the onions and tomatoes. Spread the meat broth and dried thyme over the meat. Simmer with the lid on in an oven preheated to 200°C for about 2 hours. Remove the lid 1/2 hour before the end of the cooking time. Serve with plenty of white bread or flatbread (as this creates a delicious sauce).
